Cooking with the Seasons - Summer NEW  (V)

Enjoy a great time learning to cook fabulous food inspired by the wonderful produce of Summer. You will learn beautiful and versatile recipes using fresh peas, peppers, ripe plump tomatoes, zucchini, fresh herbs and much more. We will also prepare and bake our Summer Schiacciata, a simple Italian bread you can easily make at home followed by dishes incorporating the best of the season together with a dessert using local seasonal fruit. Suitable for Vegetarians and those wanting to get the best out of this season's produce.

Italian Flatbreads   (V)

Learn to prepare, bake, and of course, eat the regional Italian Flatbreads that became so popular at our small country restaurant in England! You will also cook a wide range of flavoursome accompaniments including Char-Grilled Marinated Zucchini with Parmigiano Reggiano, Mushrooms with Gruyere and Rocket, Tasmanian Goat's Cheese with local Walnuts and more. Included in this fabulous class is a discovery lesson of some of the regional specialities from Emilia-Romagna. (Suitable for Vegetarians).  Class Fee: $145 per person all inclusive *

Garlic Master Class   NEW

My first Master Class features Garlic in all its glory. In this highly perfumed and informative class you will learn about Allium Sativum from paddock to plate. Its biology and structure, origins and history, types and varieites and its culinary and medicinal uses from Ralph Plen of TazGarlic, followed by a hands-on cooking class where we explore the flavour of garlic by using different cooking techniques in a range of recipes to create some delicious dishes. As a bonus you will be given some TazGarlic to take home.

PRIVATE CLASS

Seasonal Italian - Fresh Handmade Egg Pasta (Liguria)

Do you have  a pasta machine and are not sure how to use it, or are looking to purchase one, or have relegated one to the back of the cupboard lonesome in its box? Then this is the class for you!   I will guide you through the art of handmade pasta making this time from Liguria so that at the end of the class, with some practice, you will be able to make your own fresh pasta at home. To accompany our freshly made pasta you will learn to cook seasonal sauces with a difference. Also learn what to look for if you are considering purchasing a machine and its care and maintenance. Be tempted, don't be shy, enjoy a sublime and tactile experience of making fresh pasta with sauces you can prepare in minutes. This class is a great morale and confidence booster. Not fish and chips! For those who love fish but fear cooking it or want to learn new ideas. This fishy class will help you gain confidence in cooking fish, including whole fish, in a variety of ways so you won't get bored. Be inspired to become more adventurous with this highly nutritious food. You will learn some essential skills of successful fish cookery and be introduced to fresh new creative flavours to accompany these fabulous fish dishes. Everyone will enjoy these delicious recipes using this wonderful ingredient so bountiful in our island state.

Tapas - The Little Dishes of Spain

Discover the passion, culture, lifestyle and rich culinary diversity that is Spanish Tapas. This is a very comprehensive class where you will learn about the history of Tapas together with fundamental ingredients and cooking techniques. Learn how to incorporate Tapas into your everyday dining and entertaining. Our authentic menu and recipes, using some special Tasmanian ingredients and inspired by our travels and cooking experiences will take you on a journey from the simplest through to more complex dishes. Come share my passion for Tapas in a very special class!

Thai Table 2   NEW  (GF)

Enjoy learning to cook a beautiful Thai menu in this fabulous class bursting with fresh colours, flavours, aromas and textures. In these recipes you will learn how to use fresh Kaffir limes leaves, chilli and coriander from our kitchen garden. You will prepare your own Tom Yam sauce to make Tom Yam Gung (Hot and Sour Prawn Soup). We will then cook Sweet Corn Fritters, Kai Yang (Thai Barbeque Chicken) with Coconut Rice and a Thai inspired salad followed by a lovely Thai dessert. Come and join us!  (Suitable for Gluten Free).

Spice Workshop 1   NEW

Spice up your life with my first comprehensive Spice Workshop in which you will learn about a range of spices and different varieties of salt. With my usual passionate hands-on guidance we will prepare some special spice mixes from scratch using whole spices. Then we will cook some flavoursome dishes using these spice mixes. Also, learn what to look for when buying spices and how to store them. You will be able to take home some of your prepared spice mixes. Come and enliven your palate with a fabulous food journey into the exotic world of spices!

Cooking with the Seasons - Autumn   (V)

Enjoy a great time learning to cook fabulous food inspired by the wonderful produce of Autumn. You will learn beautiful and versatile recipes using pumpkin, potatoes, spinach, silverbeet, olives, fennel, produce from our kitchen garden, ricotta and much more. We will begin by preparing olive oil pastry to make our Torte di Verdure followed by various dishes incorporating the best of the season together with a dessert using local seasonal fruit. Suitable for Vegetarians and those wanting to get the best out of this season's produce.

Risotto, Simply Sublime 

Excellent sublime risotto is not as difficult or as time consuming to prepare as you may think. What is served as risotto in some places makes me weep but with some knowledge and skills you can prepare beautiful risotto at home. Learn the art of risotto making in a class where I will show you how to cook perfect risotto using two versatile savoury recipes and one sweet. This beautiful that echoes my Northern Italian heritage can be used with a wide range of local seasonal flavourings including seafood, vegetables and game. Also find out about the different varieties of rice to use in authentic risotto. I invite you to share our treasured risotto recipes cooked by us at home and in our past restaurants.    Class Fee: $150 per person all inclusive *

* My Cooking Classes are Different - I pride myself in a tradition of running special artisan Hands-On Cooking Classes with a Difference with personalised tuition in small intimate groups in my own kitchen using fresh local seasonal and organic produce with herbs and other edibles from our Kitchen Garden. You are welcomed as a student and a guest, like being invited to a private luncheon but with in depth learning about the food and hands-on preparation. Not only do you learn through a unique hands-on experience but you also share in a generous lunch of the delicious dishes cooked in class with complimentary beverages and excellent locally roasted coffee. You also receive comprehensive notes with clearly printed recipes that have been personally tried, tested and written by myself.
